
Sunday is back again... if only our weekends could last a few days longer!
I am trying a few new recipes this week - most of which I found on one of my favorite apps, Yummly. I cheated a little by using rotisserie chicken, frozen meatballs and broccoli. Take the shortcuts where you can!
Here's what's on the menu:
Breakfast:
Baked Broccoli and Cheese Mini Frittatas
Yogurt Parfaits
Chocolate Coconut Overnight Oats
Dinner:
Ground Beef and Broccoli Casserole
Chicken w/ mustard cream sauce
Chicken and Avocado Burritos
Grilled Salmon Salads

Try to look for recipes with similar ingredients to simplify your grocery list and don't be afraid to look for shortcuts where you can (frozen veggies, prepared chicken, etc). Read your recipes ahead of time so you know where you can multitask to save you even more time.
Remember, a little planning goes a long way. What may seem like a lot of work today, really does save me a ton of time throughout the week. I love coming home from work knowing I don't have to spend a couple more hours in the kitchen just to put a healthy meal on the table.
Once you get the hang of it, meal prep is a lot easier than you think! Enjoy it! 🙂
