Week ___ of quarantine life (I've already lost track). The days are starting to run together, but I can always count on Meal Prep Sunday to bring me back to my routine!
I would like to share that one benefit of this quarantine is that I now have a potty trained toddler... YAY!! Good thing, because diapers and wipes are nowhere to be found. And to all you people hoarding TP out there - when I run out, I'm sending my kid to your house when he needs his butt wiped. Just saying...
Okay on to the meal plan this week! I rummaged through my pantry and freezer to see what I had to throw this one together. I stocked up on chicken, ground beef, and eggs from our local butcher so here we go.
There are 2 lunches, 1 breakfast, and 1 snack to prep this week. I only planned for 3 dinners and will be using leftovers from those a couple of days to save some time. I halved the recipe for the egg sandwiches simply because I don't have the freezer space right now, but these will keep in the freezer for 3 months so you can stock up! I would boiled all your eggs to start just so they have time to cool before you make the egg salad. I made a few extra of those for snacks as well. You can make the overnight oats the night before and let them set in the fridge.

Chocolate Peanut Butter Overnight Oats
One Pan Roasted Chicken, Broccoli, and Sweet Potatoes (prep)
Easy Healthy Egg Salad (prep)
Stuffed Cabbage Casserole
Air Fryer Chicken Parmesan w/whole wheat spaghetti
Fudge Brownie Chocolate Protein Bars

I hope everyone is hanging in there with the recent extension of the quarantine. I urge you to abide by the social distancing and look for local grocery delivery in your area or try to get a pick up scheduled instead. If you can't avoid going out, just keep in mind the best we adhere to the social distancing the sooner we'll be able to get back to normal living.
Stay inside, stay safe, and help each other out when you can. We'll get through this!
