I'm back with another Meal Prep Sunday! I know the days are starting to run together, but I hope this is helping keep you on track. I finally broke down and bought a new toy this week - the Ninja Foodie 5-in-1 Indoor Grill w/air fry, roast, bake, and dehydrate. I have been wanting an air fryer, so compromised with my husband that I'd get rid of my indoor grill and griddle to make room for this beauty! 😉
I tested the waters this weekend using the grill and the air fryer function and was pleasantly surprised. I know air fryers are popular right now, so I included a few recipes in the plan this week so I can play some more. I put together a very kid friendly plan with pizza, chicken fingers, shrimp, and sloppy joe recipes for dinner. Get them involved in helping you make them! My little dude is obsessed with cracking eggs right now, so he helped with the breakfast casserole (with a full disclosure to my husband to watch out for shells).
There are 2 breakfast recipes and 1 lunch to prep this week. I made the banana bread into muffins to shorten the bake time and make it easier to portion. I have my typical snacks - veggies, greek yogurt parfaits, fruit and protein shakes. Hope you enjoy!

A friend of mine shared a new recipe blog with me - Fit Men Cook. I included one of his recipes this week and would encourage anyone out there who's hubs wants to jump on board to check him out. He has a lot of simple, budget friendly healthy recipes that I'm looking forward to trying out...
