Meal Prep Sunday 3/14/21

I am excited to announce that I passed my ACE Fitness Nutrition Specialist exam this past week!  I started the study program over maternity leave since I knew I'd be spending a lot of time stuck in the nursery.  Even though I am a pharmacist and conventional medicine is typically what we promote, I have a strong belief in functional medicine and the effects your nutrition can have not only on physcial fitness but in preventing disease as well.  In my eyes, disease prevention should become more of a focus in our society as opposed to just the treatment.  If you take care of your body now, it'll return the favor down the road!

Ok, jumping off my soap box now... I didn't have much time today to spend in the kitchen, so went with an (almost) no cook mini meal prep for the week.  The baked oatmeal cups were as close as I got and I deicded to give the apple cinnamon version a try.  Here's what's on the menu:

Breakfast:

Chicken and Avocado Burritos
