
Happy November everyone!! I'm back in town and back in the kitchen this week for another Meal Prep Sunday.
I'm easing myself back into it, so not too much prep to do today. I have my plan for the week and will be using some of my dinner leftovers for my lunches.
Here's the menu for the week:
Breakfast:
Chocolate Zucchini Mufffins
Fruit on the Bottom Chia Pudding
Lunch:
Turmeric Turkey, Zucchini, and Sweet Potato
Leftover dinners
Dinner:
Creamy Spaghetti Squash Casserole
Slow Cooker Apple Cinnamon Pork
Pressure Cooker Bean-Free Chili
Pressure Cooker Cashew Chicken
All I had to prep today was the Turmeric Turkey, Zucchini, and Sweet potato for my lunches and the Chocolate Zucchini Muffins. I started with the lunch and put the sweet potato and zucchini in the oven to bake while I went on to prep the zucchini muffins and ground turkey.
By the time the sweet potatoes and zucchini were done, my muffins were ready to go. As the muffins baked, I prepped my snacks and put some eggs in my pressure cooker to hard boil. The chia pudding will last in the fridge 4-5 days, so you can prep a few servings now or just whip it up the night before.
Wa-La!! Everything was cooked and prepped in a little over an hour...
I'm going to put my pressure cooker to use this week with a couple dinners I can throw together after work in less than 40 minutes. I also love the crockpot this time of year for a set it and forget it ready to eat dinner when I get home. I plan to share some of those recipes later in the week!
I hope you all enjoyed Halloween with the little ones. It was a full family affair in our household and my kid is definitely going to be in a sugar coma until the New Year. Let the Holiday madness begin!! 😉
