Meal Prep Sunday already?? I'm throwing in a little bit of everything this week - grab and go breakfasts, crockpot meals, and ALL THE AVOCADO!!
This is a moderate-carb Paleo inspired meal plan which I find works better for me and my energy level. I have been sidelined with a back flare so wanted to stay lower carb but not go as extreme as keto.
The Oatmeal Cups are a breeze to throw together. You can put those in the oven with the Avocado Brownies and make up your Burrito Bowls while they are both baking. I'll make the Chia Pudding the night before I plan to eat it so it can set overnight in the fridge.
If you're on the low carb train,you can use lettuce boats instead of bread for the egg salad sandwich, or you can always nix a piece and make it open-face! I hard boiled all the eggs ahead of time and I'll be making that tomorrow so it lasts a bit longer.
I'm also not a huge fan of lamb, so will substitute chicken for the slow cooker White Bean Stew. A lower carb option here would be using cauliflower instead of potatoes for your filler.
I also went ahead and prepped the raw meatballs for the Slow Cooker Spaghetti Squash and Meatball recipe. I'm going to freeze them so I can just throw everything in the crockpot that morning before work.
I'll be using leftovers from both crockpot recipes for lunches the next day to save myself some prep time.
I've always wanted to try out avocado brownies and they smell delicious! I stopped myself from eating them right out of the oven, but I doubt I'll make it through the day... 😉
Here's how it all comes together this week (average 1500 calorie/day). Of course I always leave Friday night open for discussion... 🙂
